Nacy, let me know how your pot roast comes out. There used to be a place downtown that served French Dip Sandwiches made from brisket I think, cooked forever and a day. The owner would not share the recipe but those sandwiches may have been the most delectable things I’ve ever eaten in my life.

Golden, who would have thought to put peanut butter into pea soup? But it makes sense in a weird, legume-y way.

R pronounced the split peas OK so we threw in veggies, meat and seasonings and put the lot in the slow cooker. I have never done pea soup this way but it should work well and doesn't need watching.

I once found a good trick online and I will share it here. I had slightly scorched some pea soup and found that a dollop of peanut butter takes away the scorched taste and doesn't affect the taste of the soup. Worked well.

psue - no prob about "liking" when or if you want to. I bet you'll get cooking on that new range sooner or later. I find cooking creative and relaxing. I can see you have a real feel for it.

nacy - I found a great recipe for the not so tender but not pot roast beef, https://www.spendwithpennies.com/perfect-sirloin-tip-roast/
I did a sirloin tip following it and the roast was perfect. Couldn't have been better.

I think my yellow split peas are too dry. I soaked them overnight and they didn't absorb all the water which they usually do. I'm simmering them without and veggies or seasonings to see if they will soften. I have had a few batches over the years which never did soften and had to be thrown out. Darn it!!!!

Send, I used to be a good cook; adventurous; playful. Over the years I’ve narrowed my repertoire to things that fit my schedule and my DH’s simple tastebuds.
Also, up until 2 months ago I had been without a real kitchen for almost a year. I’m out of practice and I am loathe to dirty my sparkly new range!

Sorry if I sometimes give multiple (or no) thumbs up to posts - I skim them briefly before bed because they make me happy, then give them a better read in the morning before DH gets up and they tickle me all over again! I forget who I’ve acknowledged the night before! I hope that’s not a bad sign…….

Yes, send. It has to mature underground! Sorry about the gout -so painful. Get better soon!

I draw the line at carrot juice. Someone I worked with once overdid it and came in with a good "tan" and orange palms.

Psue - the air fried carrots sound lovely. I don't have an air fryer yet. I tend to fall back on the things we had at home -fry pans, pots and an oven, though I do use my food processor. R is getting his turkey roaster out of storage for our Thanksgiving turkey. I've only ever used a regular oven. Cream of carrot soup would be great for R. I can't do the cream. I'm soaking peas tonight for pea soup - which will have carrots, and celery, and thyme and smoked beef a la newfie jiggs dinner leftovers (smoked ham hocks and salt beef - sort of a combination).

R had a strawberry, spinach, sliced almonds, croutons salad, brown rice and the salmon. I had munched my way through some strawberries, grape tomatoes and nuts while unpacking the groceries so I didn't need supper.

The new chocolate flavour today was 5 Chile Bullet. It does clear the sinuses.

Aw, Carrot Juice.
A sweet vegetable, can help with inflammation.
Carrots, tumeric, ginger, lemon.
I have a good juicer, somewhere.
Do not need to peel them.

Always felt bad throwing out all of the solid-it looks like the ingredients of a pumpkin pie.

Peasuep,
You must be a good cook with those suggestions!

Send help, your sense of humor resonates like a tuning fork with me. So sorry about the gout flare - I know it’s incredibly painful.

Golden, jumbo carrots, peeled, cut lengthwise, rubbed with coconut oil and sprinkled with a flaky salt, air fried until al dente’ and browned. Not a full meal but delicious. Would go great with your overpriced salmon!
How about cream of carrot and fresh parsley soup with a sour cream drizzle?
Split Pea soup with lots and lots of carrot ‘coins’?

Nacy, carrot cake with everything; coconut, pineapple, currants. Dense and dark, and whipped cream with a little sour cream or sheep cheese stirred in to brighten it; minimal powdered sugar. Oh.

Golden,
WHAT?
You plant the carrot cake, then must dig it up?

I like the carrots that are served with Beef Wellington.
Sliced at a slant, baked/roasted with the beef and potatoes.
Great natural sauce.

Since that will never happen here, I put all the carrots in the crisper, outta sight, outta mind. I tried just baking the carrots one night, and reported here the outcome was they were spoiled left out overnight. Forgot to serve them.

I cannot stand at the sink and peel carrots.
This week I have an episode of gout with so much pain I cannot walk.

Reminds me, thanks. We could have carrots for dinner.

Nacy - Of course - smacks forehead. I knew I was missing something. Somewhere I have a recipe for carrot cake which R pronounced the best he had ever eaten. Must dig it up.

I think carrots, and more carrots and then more carrots. I did it to myself. 10 lbs of jumbo carrots. I didn't read the description properly. 😒

And they will go with the small piece of salmon I was overcharged for - $39.66 for a piece that was marked $9.60. Yes, I have complained and asked for a refund.

I see carrot fritters in the future, carrot salad, roasted carrots, mashed carrots, carrot cookies, pickled carrots, carrot soup and just plain old raw carrots which I love and more. Fortunately it is getting cooler, but not freezing, so they can stay on the balcony for a while as I figure out what to do with them. Perhaps some to R's horses.

Send, what is it about carrots???

Nacy and ITRR - I love cooking too. Good thing with all these carrots around!

Ana - that's cute!!!

Psue - getting the fire pit going sounds awesome. An aunt had a large lot and a fire pit. She used to buy flank steaks on sale and store them in the freezer, When she had enough she invited lots of us over and we cooked them on the grill over the firepit. Great memories!!!

I had every intention of hitting the grocery store on the way back from my haircut this afternoon but they had to cancel and now I don’t feel like shopping. So Ana, I will not be making my hubby happy at least until my scheduled grocery pickup on Friday.

After Friday I will have ingredients for several hearty, old-timey casseroles - I’ve really been craving them since it’s started to get chilly at night. We’ll get the fire pit going this weekend when GD is here. She and her GF can gorge on S’mores while my daughter and I enjoy a craft Pumpkin Ale. I love Autumn!

My mom (90 this month) can’t really taste chocolate anymore. When she told me I went into mourning! That happened to me while on chemo but it came back after a year.
Golden, I don’t know which would be worse, not being able to taste it or not being able to eat it due to health reasons.

Nacy, can you add something like a spoonful of good quality instant coffee or hersheys syrup to your protein drinks? When DH was recovering from heart surgery I would blend one with a frozen banana and a spoonful of peanut butter.

Tonight, taco salad again. It’s a staple for us. Sadly, avocados haven’t been good lately so that’s probably it for them this year. I’d choose an avocado with lemon pepper over chocolate any day!

nacy -sounds good. I wish I had more room for storing/freezing food. Home made apple sauce is the best.

psue - I love popcorn with lots of "butter" - in my case earth balance marg. I often cook for R and eat something else myself.

Tonight ham steak, roasted veggies - opo squash with cinnamon, onions and cucumbers with dill - and perogies.

Amazon got my dairy free chocolate here after supper. I tried a square of a dark choc bar. It is dairy free but - meh - not up to the really good chocolate I like, but better than nothing - I think. The 5 chili one should be interesting. Maybe I will use it in a mole sauce.

Tonight for DH it’s night #2 of the Sloppy Joe Casserole inspired by pamz. It’s really good but I remembered why I haven’t made it in such a long time - It’s too labor intensive for a busy day. I’m glad I made one for the freezer although I’m a little worried about the pasta getting mushy.

For me it’s a Wine and Whine night with a girlfriend so crackers and cheeses, nuts and figs and lots of catching up! We’ll wrap up in fleece throws on the deck and watch the bats.

cwillie, everybody is complaining about the new Pepsi packaging. It’s very good looking and I appreciate the effort for the environment but I think they need to go back to the drawing board.

cw I will avoid any pepsi in new packing. Thx for the heads up.

Oh dear. R brought home a container of oysters the other day I was trying to forget about. He correctly said this evening that these should be cooked. I hadn't egged and bread crumbed anything in years and years.

Guess what? They turned out ok. Next time I will have some gluten free bread crumbs on hand so I can eat them too.

Does anyone have a fave oyster recipe?

Psue - it was during my early instacart days. There was one particularly ditzi shopper who seemed to throw extra things in my cart. A few apples was translated to a large bag, one six pack of romaine hearts was doubled and so on. She didn't last long.

R freezes eggs when they have too many at the farm. He just cracks them and throws a few in a baggie and into the freezer - good for baking, scrambled or whatever.

Tonight I made a version of bubble and squeak - cooked them in patties rather than a whole pan full. We had leftover mashed potatoes and left over brussels sprouts which are traditional for bubble and squeak. I cooked bacon to serve with the patties and we had tomatoes from the farmer's market. Not the healthiest meal but R pronounced it good. I had to pass on the patties due to milk and butter in the mashed potatoes. One of these days I'll make proper latkes.

Nacy - I had 4 kids, (three boys) and often extras in the house and a husband with a big appetite. I still cook for six often. It's hard to break that habit.

Peas, I think I would put new eggs out to watch the ravens.

We have predator birds and it is difficult to see them swoop in on doves or other birds but, I would feed them eggs to stop :-)

I discovered the egg freezing during covey and thought I would see how well it worked, I was happy dancing. I'm easy to entertain. Hope you all have great results if you try it.

I had no idea you could freeze eggs like that! Brilliant! All this time I was letting my granddaughter place old eggs strategically on top of rocks in the yard so we could watch the ravens try to carry them off, whole! Wasteful, but highly entertaining.

Tonight it’s homemade baked chicken burritos (shredded breast, brown rice, black beans, fire roasted corn, cheddar) and green salad with a gorgeous tomato from SIL’s garden.
